Found on the FatFree Vegan Kitchen blog--this recipe for Ridiculously Easy Lunchbox Enchilada Casserole. And here is my version. I chose to use medium enchilada sauce instead of salsa, and my filling was refried beans, shredded Mexican cheese, and sliced black olives (all bits of leftovers lurking in my frig!) It was absolutely delicious. My only regret is that there wasn't more of it. Guess I need to buy me a new bigger dish because I can see this becoming a regular "take-to-work" food item :-)
