My kids *L-O-V-E* it when I make these pancakes...or better yet, waffles...so here's the recipe.
3/4 cup whole wheat flour
1/2 cup white flour
1/2 cup cornmeal
1/3 cup quick oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbs Ener-G egg replacer
3 Tbs maple syrup
1 tsp vanilla
1/4 cup vegetable oil
2 cups buttermilk
That's it...and you know how to mix and then make pancakes, so I won't bore you with all of that ;-) Stay tuned next month for maple syrup time!
